Our Ingredients

We love tasteful food that is both, healthy and fun to eat, so everyone, vegetarians and nonvegetarians, can have as much (fun) as they want without hesitation. Current trends in the food industry are changing, with consumers being more concerned with the quality of the ingredients they digest. 'Less is more', a universal principle that is progressively sinking in many aspects of the food industry, so consumers more and more often prefer simple, less processed food in their diets. That lack of processing is reflected in the simplicity of the base ingredients of our flagship dish, the tortilla.

The potato: We use for our tortillas white, grade A potatoes. We use this type of potato not only because of their creamy, tender and subtle sweet texture, but also because their nutritional properties. Potatoes are a very good source of vitamin B6 and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber and pantothenic acid. A single potato (approximately 5.2 ounces in size) has 110 calories... and no fat!! How about that!

The egg: Eggs are an excellent low-calorie way to get protein, vitamins, minerals, antioxidants, and other healthful compounds into your diet. We use organic large Grade A eggs, as they provide the right balance between fat and protein contained within the shell. This means that, through our tortillas, you will get 6 grams of high-quality protein in just 70 calories per egg. Keep in mind that a 10 inch tortilla contains about 400 grams of egg (about 6 eggs), which is a very large egg consumption for a single person in one go. Remember, our tapas are designed to be shared!!

The onion: The dilema to every spaniard when making an omelette is to use onions or not as part of the base ingredients. The reason is because the puritans think that a potato omelette ('tortilla de patata' ) is meant to have potato, and nothing else that may adulterate its flavor. However, when the right proportion of onions is included in the recipe, the sweetness of the cooked onion adds an incredible sweet and sour flavor to the combination impossible to match without the onion. We use Spanish yellow onions in our recipe, because they are sweeter and more delicate in flavor that the plain old yellow onions.

 

The bread: All of our tortillas are sold with base of sourdough bread. When the salt of the bread combined with the sweetness on the potato and the onion in the tortilla, your mouth will melt in flavor. But when the bread used is sourdough bread, the aromas from the bread and the salivation it produces will, not only increase the flavor of our tortillas, but also will help the digestion of your meal. All of our breads are baked by reputable bakers in town, such as The Four Worlds Bakery.
